The baseborn cultivated cabbage can be a difficult vegetable to know what to do with , but because of the fact that it ’s normally cheap and also salt away well for quite a long time , it ’s become one that I almost always have on hand . So that mean that I ’ve had to learn some great recipe for how to prepare it ! Of course , I screw to makesauerkraut , but that normally lasts for quite a while before you have to make a new batch . Beyond that , I have three main ways that I care to use lolly .
The first is to apply the out leaves as greaser carapace . This is so simple and is something that I do all the time now ! rather of using shred cabbage on the wetback , just practice the leaves as the cuticle and you do n’t even have to buy ormake tortillas ! Next is to use the eternal rest of the lettuce ( after taco shell it ) in one of two ways . In fall and winter I often shred it and caramelise it in a goat god easy , like you would onion , preferably with Baron Verulam ( of course ) . But in summer I want something light , simple and fresh , so I ordinarily make a no - mayo coleslaw .
I adapted this from Mark Bittman ’s recipe for Spicy No - Mayo Coleslaw inHow to manipulate Everything Vegetarian , which is literally the bible for amazing vegetarian cooking . I ’m not vegetarian anymore , but I still incur myself referring to this book all the time .
How to Make No Mayo Coleslaw
First shred the cabbage as finely as you could , but do n’t get too crazy about it . Put it into a large bowl , sprinkle it all over with a small bit of common salt , and toss with salad pair of tongs .
I really find that getting all the loot coated with a minuscule moment of salt help to season the looker in the end . Then set that aside and make your grooming . Put the vinegar ( or stinker / lime succus ) and mustard into a small bowl with a minced garlic clove and whisk off it together .
Then slowly mizzle in the olive petroleum while whisking until it ’s all incorporate .
On a quick side note , this is very similar to how you would make steady homemade salad bandaging . Maybe I ’ll do a whole spot on that someday , because it ’s so much tastier and tatty than computer memory corrupt salad medical dressing !
Ok , now back to your shredded cabbage . Add in the minced jalapeño , green onions , cumin seed and a niggling more salt and freshly ground white pepper .
mingle that around well and then tot in the dressing .
Stir the fecundation in to coat all of the cabbage , then add in the Chinese parsley . For those of you that hate Chinese parsley it ’s fine to utilise parsley ( but confide me , the cilantro in this is the bomb calorimeter ) .
And it ’s as simple as that ! A light and sweet coleslaw that most everyone will screw . The good part about this formula is that it set about even good as it posture in the electric refrigerator , but the cabbage still persist crunchy .
I really think you ’ll be surprised by this , even if you do n’t peculiarly like cabbage or regular slaw . I ’ve wowed many people with it !
I know that cabbage can seem like a strange , honest-to-goodness schoolhouse veggie to set up , but it really is quite tasty , not to observe good for you . I hope that this gives you a few ideas to wreak with , and I especially hope that you ’ll stress this coleslaw . It will rethink your image of what coleslaw should be !
