In northeasterly Iowa , lunch was any repast serve between breakfast and dinner party or supper . On summertime evening , a visit to Grandpa Ott ’s farm would end with lunch even it was 11 o’clock at Nox . When we smell coffee boiling on the stove , it was time to go into the kitchen . Grandpa would get out his homemade wurst — he did his own butchery and smoked the sausage — and he also blend horseradish root with vinegar , lucre , and cream to serve aboard .

Most memorable was his “ garden huckleberry ” jam . He would harvest the berries when they were the size of a blueberry bush and a dull purple , often after a light-headed frost . The berries were not so tasty to eat overbold from the garden — but when Grandma Ott wangle them and contribute lucre , a deep royal beautiful fruit appear .

Grandpa was one of the first in the neighborhood in the sixties to grow garden huckleberry , and he call back they were exotic growing next to the garden necessities . I am sharing my sept ’s simple recipes from lunch in Grandpa and Grandma Ott ’s kitchen .

Huckleberry Jam

Bring to roil , and plough down and simmer for a few minutes longer until clear and thickened . nerveless and store in icebox .

Huckleberry Syrup

“ This was my conception as well as my children ’s favourite huckleberry formula , ” articulate Diane . “ It ’s smashing for topping pancakes or adding to froth piss for a refreshing spritzer . ”

Dissolve cornflour in a small trough with ¼ cup piddle , set aside . Put berries , water , and a emergency of bake sodium carbonate in a pan .
